Food Technology

The students will design and make food, and food products, using a variety of ingredients and processes. Work is set which encourages research and analytical skills, followed by suggestions for final products/dishes. A range of practical skills will then be used to make and develop the product, using the chosen ingredients and processes.

The coursework project consists of a single design and make activity of the students own choice. The areas of study may include food properties and characteristics, use of processes, accuracy and finish, product development, manufacturing, processing and labelling.

The examination tests the students’ knowledge of production methods, ingredients, hygiene, packaging, control checks, sensory analysis, use of CAD and CAM, social, moral and cultural issues.
